Lemon Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/4 cup fresh lemon juice (about 1-2 lemons)

  • Salt and pepper to taste

  • Lemon slices and fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.

  2. Cook the Chicken:

    • Heat 2 tablespoons of olive oil in a large skillet over medium heat.

    • Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.

  3. Make the Lemon Garlic Sauce:

    • In the same skillet, add the remaining 1 tablespoon of olive oil. Lower the heat to medium-low and add the minced garlic, cooking for about 30 seconds until fragrant.

    • Stir in the dried oregano and thyme, and cook for another 30 seconds.

    • Add the lemon juice, and scrape up any brown bits from the bottom of the skillet. Let the sauce simmer for 1-2 minutes.

  4. Coat the Chicken:

    • Return the chicken to the skillet, turning to coat it in the lemon garlic sauce. Allow it to simmer for another 2-3 minutes to absorb the flavors.

  5. Garnish and Serve:

    • Garnish with fresh lemon slices and chopped parsley (optional), and serve with your favorite side like roasted vegetables, quinoa, or a light salad.
