This week’s “Healthy” recipe kind of depends upon what kind of diet you are utilizing, but all the ingredients are healthy and wholesome and they don’t have a bunch of added sugar… plus they are just delicious. 😊

Peanut Butter Date Energy Bites

1 cup of fresh pitted dates
1 cup of rolled oats
1 Tbsp of organic honey
2 Tbsp of vanilla extract
3/4 cup of organic or regular peanut butter
2 Tbsp of almond milk
1/2 cup of sugar free chocolate chips

First, pit then soak the dates for 30 minutes in hot water so they’re soft enough to grind down. Next grind the pitted dates in the food processor. Then add all the other ingredients to the ground dates and mix. Roll the mixture into small bite size balls and then roll them in unsweetened shredded coconut.
