Grilled Fish with Sautéed Spinach and Roasted Sweet Potatoes
Ingredients:
For the Roasted Sweet Potatoes:
2 medium sweet potatoes, peeled and diced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper, to taste
For the Grilled Fish:
2 (6-ounce) fish fillets (such as salmon, tilapia, or cod)
2 tablespoons olive oil
Juice of 1 lemon
2 cloves garlic, minced
Salt and pepper, to taste
Fresh herbs for garnish (optional, such as parsley or dill)
For the Sautéed Spinach:
2 cups fresh spinach leaves
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper, to taste
A squeeze of lemon juice (optional)
Instructions:
Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C).
In a bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them out in a single layer on a baking sheet.
Roast in the oven for about 25-30 minutes, or until tender and lightly caramelized, stirring halfway through.
Grill the Fish:
While the sweet potatoes are roasting, prepare the fish. In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper. Brush the mixture over the fish fillets.
Preheat a grill or grill pan over medium heat. Grill the fish for about 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork.
Sauté the Spinach:
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Season with salt, pepper, and a squeeze of lemon juice if desired.
Serve:
On each plate, serve the grilled fish alongside a portion of sautéed spinach and roasted sweet potatoes. Garnish with fresh herbs if desired.
