Thanks for sharing a few minutes with us this Monday morning. I hope you all are doing great… even though it’s Monday. 😏
A few days ago, I was having “one of those days”. Nothing was going right. Traffic was terrible, my phone was blowing up with issues and problems, everyone just seemed to be needing something from me, and on, and on, and every little thing was annoyed me. I’m sure you’ve all been there at some point.
As I was dealing with all that, I realized this might be a good topic to discuss in this week’s newsletter. To hopefully give you some tips on how to deal with days like this and turn it around.

How to Bounce Back When Your Day Doesn’t Go as Planned
We’ve all had those days where nothing seems to go right. Maybe your car broke down on the way to work, an important meeting was canceled, or small frustrations just kept piling up. It’s easy to feel overwhelmed, angry, or upset when things don’t go as planned, and these emotions can quickly take over your entire day. But what if there was a way to move past the bad moments without letting them ruin everything? The truth is, with the right strategies and mindset, you can turn things around and regain control over your emotions. Here’s how.
Acknowledge How You Feel

One-Pan Mediterranean Quinoa and Vegetable Bake
Here’s a delicious One-Pan Mediterranean Quinoa and Vegetable Bake recipe by Yotam Ottolenghi, known for his vibrant and plant-based recipes.
Ingredients:
1 cup quinoa, rinsed
2 cups vegetable broth or water
1 red bell pepper, diced
1 zucchini, diced
1 cup cherry tomatoes, halved
1 small eggplant, diced
1 onion, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional, for heat)
2 tablespoons olive oil

Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
