1/2-3/4 cup of chopped spinach

2-3 ounces of feta cheese

Preheat oven to 350 degrees. Spray a 12 cup muffin pan generously with cooking spray.
Combine eggs, cottage cheese, garlic powder, salt and pepper. Mix all together until smooth. Add in spinach, tomatoes, and feta after blending.
Ladle the mixture evenly into the muffin cups, filling each about 3/4 way full. Bake in the oven for 20-22 mins.
