Butternut Squash & Quinoa Harvest Bowl

This comforting and nutritious fall recipe is perfect for chilly days. Packed with protein, fiber, and seasonal ingredients, it’s sure to become a family favorite.

Ingredients:

  • 1 medium butternut squash, peeled and cubed

  • 1 cup cooked quinoa

  • 2 cups kale, chopped

  • 1/4 cup pumpkin seeds

  • 1/4 cup dried cranberries

  • 2 tbsp olive oil

  • Salt & pepper to taste

Dressing:

  • 2 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

Instructions:

  1. Roast the butternut squash at 400°F for 25-30 minutes.

  2. In a large bowl, combine quinoa, kale, roasted squash, pumpkin seeds, and cranberries.

  3. Whisk the dressing ingredients together and drizzle over the bowl.

  4. Toss to combine and enjoy!
